Willpowaaaa!!
Roasted eggplant, spicy spinach with chickpeas, and a salad with sprouts, tomato, scallion, and tofu.
Dinner! I had grilled bok choy with balsamic glaze, and a lentil/ oat groat/ barley mixture with sautéed onions and mushrooms. Party in my tummy and you’re all invited.
Red Velvet Pancakes
Ingredients:
- 1/2 cup egg whites
- 1 banana
- 1.5 tbsp cocoa powder
- 1/4 cup plain greek yogurt
- 1 cup oats
- 1 tbsp flaxseed
- 1 tbsp wheat germ
- 1 tsp vanilla
- 2 tsp espresso powder
- 1 tbsp stevia
- 2 tsp baking powder
- 1/4 cup water (roughly)
Mix all ingredients in a blender until the consistency is smooth. Cook on a non-stick pan with some olive oil.
Makes 8 pancakes, each having 75 calories, 1 g fat, 3 g sugar, and 5 g protein.
Made a huge batch of concentrated tea to save and use for iced tea throughout the day :) I used passion, wild berry, cranberry pomegranate, and tangerine orange tea.
My lunch! Spaghetti squash with pesto, mushrooms, tomato, and tofu. Before and after the sprinkling of nutritional yeast :)
I microwaved 1/2 a spaghetti squash on high for 8 minutes (cut side down). In a pan I fried 1/2 a block of firm tofu, then added a few mushrooms and sliced tomato and let it all sauté in olive oil. Then I added some chopped garlic and pesto, as well as some black pepper. Then I scooped out my squash, added it to the pan, and mixed it around. Top it off with some nutritional yeast and it’s amazing!!
Random, but I really like having a carrot cake pancake with my tea :p it’s a nice substitute for when I’m craving a cookie or pastry to have it with!
So sometimes people ask me to take pictures of my food/ kitchen, and my mom and I just went grocery shopping so here’s my fridge! I’ll go through it shelf by shelf, from top to bottom, left to right:
- Greek yogurt (flavored, plain, and big tubs), nut butters, egg whites, and some condiment-y things (though most are in the side door)
- Mushrooms, tortillas/ wraps, some veggies and fruit (most fruit is in a bowl out of the fridge), tuppperwares of leftovers (currently some cooked tofu and some tuna), hummus, tofu, and tofu noodles
- Random cheese and cold cuts drawer that I never use haha
- Eggs, VEGETABLES (usually the ones to be cooked or lettuce/ spinach), milk, nutritional yeast
- Left drawer: mostly veggies meant to munch on raw (carrots, cucumber, celery, peppers, etc.), right drawer: things like wheat germ, flaxseed, wheat bran…
- Then in the side door there’s things like jam/ jelly, drinks, condiments (mustard, asian sauces, mayo… yeah )
There might be some stuff in the back that I’m forgetting, but this is my favorite state of the fridge :)
My bro and I were left to fend for ourselves for dinner tonight and while he had a quesadilla and chicken, I made myself this fab stir fry and devoured it all by myself :D it has tofu, onion, mushroom, broccoli, and beet greens.
Too freaking good.
Combo I just can’t resist: mint and chocolate. Whether it be this ice cream, york patties/ pieces, junior mints… they’re sooso good.
That and soft, warm peeta pita. Which was basically my entire night… ;D
So I guess I have a knack for making delicious food look gross in pictures… Cuz this stuff was fabulous. Veggie lentil soup, and then roasted beets, sweet potato, and onion.
