Carrot Cake Pancakes
Ingredients:
1 carrot, cut + partially steamed (or just raw if you’re in a rush!)
1 banana
1/2 cup egg whites
3 oz plain greek yogurt (1/2 small chobani container)
1 cup oats
1 tbsp wheat germ
1 tbsp flax
1 tsp vanilla
Spices to your liking (I used mostly cinnamon with some allspice, nutmeg, and ginger)
2 tsp stevia
Use a blender to mix everything together until it’s a smooth, even texture. Add water if its too thick (I used around 1/4 cup water) and blend it in. Then, pour out and cook on a non-stick pan or griddle with some olive oil.
Makes 10 (delicious) pancakes! Each one has 62 calories, 1 g fat, 3.5 g protein, and only 2 g of sugar.
There are good eaten plain, with some greek yogurt, sliced banana, maple syrup, walnuts, etc. Feel free to experiment :)
Personally, I would eat a few of these for breakfast along with scrambled eggs or oatmeal and some fruit!

Lolol making breakfast and it’s like I put vegetables in my eggs or something. Spinach, onion, peppers, and asparagus. Then 2 eggs, some whites, and nutritional yeast. Nom.

Fooood. I had my usual cup of oatmeal with some sliced strawberries, then 2 hard boiled eggs (only one is pictured because I didn’t want the other to get cold while I ate it hehe). I’m going to take a practice English AP now, and I’m brining along a baggie of almonds and some dried cranberries!

For breakfast I had 1 egg scrambled with 1/2 cup of whites, spinach, onion, and nutritional yeast. I had a sliced tomato and 3 Finn crisp crackers, and then a grapefruit. Oh and some plain Greek yogurt with cinnamon and Stevia, then my multivitamin. I’m gonna track my food today (mostly to see how obscenely high my sugar intake is and to make sure my proteins not too low, which I fear it is.) and also so those of you who ask how many calories I eat can get a real concrete number rather than a random guess. Anyway so far I’m at 540 calories, 31 g sugar, and 44 g protein.

Continental breakfasts suck. I had an apple, some Cheerios, and orange tea. I also had about half of a large orange… And we’re going to a store soon to try to find me a chobani haha. Oh and I took an apple for the road, too.
They had tons of pastries, waffles, bagels, muffins, sausages, bacon, and some weird looking egg circles. Ew. They also had oatmeal which I got kinda excited about, but it was only the pre-flavored “peaches and cream” or “strawberries and cream” ones.
Oh well, I managed.

So far I’ve eaten steel cut oats with flaxseed, cinnamon, dried blueberries, and walnuts for breakfast… But I’m still hungry! What else should I have?

THIS EGG. Omg, so good. Really, better than I imagined last night. It sounds sort of odd, but it’s fantastic. Oh, and mine is sort of orange-y because I used roasted red pepper hummus :P

What was in it?

2 eggs, 1/2 cup egg whites, 1 tbsp nutritional yeast, 2 tbsp hummus, 1 cup kale, pesto, S+P.

340 calories, and 33 grams of protein ;D

I had this for breakfast with some fruit salad (mango, kiwi, and clementines) and a slice of ezekiel toast.

Breakfast was steel cut oats with applesauce and cinnamon, a kiwi, and plain Greek yogurt.

A pretty unusual breakfast. I had carrots and pepper with hummus and some roasted acorn squash. Then I had two rice cakes with a banana and peanut butter (yuuuuum).

Guys I think I’m delirious. I’ve been up since 5:30 and left the house while it was still dark. For breakfast I had farro, 1 egg, egg whites, and spinach (copying Lane). It looks like vomit. Oh and some cantaloupe. Ive brought clementines, granola bars, and soy crisps Now I’m on the road, laying across the back seat with my pillow. I look like a crazy :p aaaand my parents are talking about taxes.
